Nummy Chicken Nuggets; Healthy Too!

Click on the pictures to see them a bit larger.

I feel soooo blessed to have 3 boys with hearty appetites.  Evan is the easiest to please with food.  Nolan is a bit tougher but not bad and Calvin is mostly attitude, not physical about his food.  Meaning, he does not seem to mind various textures, etc.  I am very very grateful for this because I know not all kids with Down syndrome are this way.

  1. I will have to try these! Probably much cheaper and healthier than the gluten-free ones I have been purchasing.

  2. Russell will not eat very many different textures, it's extremely frustrating! Three boys...Just wait until they're teenagers and eat you out of house and home! lol

  3. Yes, they already do eat us out of house and home - especially cereal! The almond flour is not cheap :( But, better than store bought. I would say the flour mixture might need to be more than a cup, but easy enough to add more if need be.

  4. I love making homemade chicken tenders/nuggets and Cora's not even old enough to eat them yet (with not nearly enough teeth). But I love the idea of using almond flour. It must give such a lovely flavor and crisp!
